Professional cooking with the ILVE Ultra Combi Oven

ILVE has launched a new collection of products incorporating a combination oven to mark its 50th anniversary.

The Ultra Combi Oven offers three cooking methods – steam, microwave and conventional – and uses technology usually associated with the commercial market. Combination mode allows the user to mix the cooking methods and nine specialist cooking programmes bring professional culinary techniques into the home.

The combination of convection and microwave cooks foodstuffs such as roast potatoes quickly from the centre with a crispy outer, greatly reducing cooking times and maintaining the quality of the dish. The microwave setting operates from 270W to 1000W with the lower setting ideal for combination cooking.

The steam oven temperature – generally operated in 5°C increments – can be adjusted by 1°C, which is particularly useful for accurate sous-vide cooking, and the oven door does not need to be opened to refill the water reservoir as it is located at the front of the appliance.

ILVE’s E3 precision temperature control allows the conventional oven temperature to be controlled by 5°C and offers a temperature range from 30°C to 250°C. The unit has a 36-litre stainless steel oven cavity with a temperature probe included.

The user-friendly TFT digital touch-control allows the user to adjust the lighting, timer, temperature and function via a sliding touch-screen display which is easy to read, accurate and simple to control.

A two-speed cooling fan cools the exterior of the appliance to ensure full protection of the components and control panel, despite high cooking temperatures. High-density insulation and a stay-cool triple glazed door provide better heat insulation and lower energy consumption.
